1 pound of Chicken Breast



Pineapple Chunks

1/4  cup of Toasted Sesame oil plus 1 tbs for Cauliflower Rice

2 tbs of Coconut Aminos

Salt and Pepper


Bag of Frozen Cauliflower Rice

Bag of Frozen peppers and onions

Cut chicken into bite size pieces.  Season with salt and pepper.  Marinate Chicken in Sesame oil and Coconut Aminos.  Marinate for at least 20 minutes but ideally 2 hours or more.  Assemble the skewers by alternating chicken, peppers, onions, and pineapple.  You can bake in oven at 350 for 30-35 minutes and then place under broiler on high for 3 minutes.  You can place on grill as an alternative option.

Recommend serving with Cauliflower Rice.  Heat 1 tbs of sesame oil in pan.  Add frozen peppers, onions, and cauliflower rice.  Once cooked, season with salt and pepper.  Drizzle with coconut aminos and add pineapple for extra flavor.
