This is my favorite way to cook lobster.  I use Ghee because it has a rich flavor and is very enjoyable.

4 Lobster Tails (Fresh or Frozen)

1/4 cup of ghee

Lemon wedges

Preheat broiler.  Place thawed lobster tails on baking sheet.  Cut top of lobster shell lengthwise with a sharp knife and pull lobster meat through slit so it sits on top of its shell (as pictured).  Broil lobster tails on high until meat is opaque, about 5-10 minutes.  Melt Ghee for Dipping. Enjoy.
