This recipe was invented by my dad.  Despite typical ingredients, it has a very unique and delicious taste.  This is an easy all in one meal.  

2 Large Zucchini

1 Large Onion

2 Bell Peppers

1 Container of Mushrooms

1 lb of Ground Beef

1 tbs olive oil

16 oz Package of Shredded Mozzarella Cheese

1 Jar of Rao's Marinara

1/2 cup dry red wine

Salt/Pepper

Dried Oregano

9 x 12 Baking Dish

Preheat oven to 350 degrees.  In a stovetop pan, heat olive oil 1/3 of the onion and 1/3 of the package of mushrooms, cook for 3-5 minutes  Add ground beef to veggies and brown.  In the baking dish layer sliced zucchini and cover with wine.  Top with a layer of sliced peppers and onions.  Then add a second layer of zucchini followed by peppers and onions.  Top the layers with the ground beef mixture.  Pour jar of marinara sauce on top.  Drizzle with olive oil and dry red wine.  Sprinkle salt, pepper, and oregano.  Top entire casserole with mozzarella cheese.  Cover with tinfoil and cook for 1 hour.
