SKILLET SHRIMP AND SCALLOPS

 

1 lb Fresh or Frozen (thawed) Wild Caught Uncooked Shrimp

1 lb Fresh or Frozen (thawed) Wild Caught Scallops

1 Jar of High Quality Pesto (Trader Joes has some great options)

2 tbs Avocado Oil

Combine Scallops and Shrimp with 1 jar of Pesto.  Mix well and allow to sit for 20 minutes.  In a frying pan add avocado oil and allow to coat the pan.  Add shrimp and scallops.  Cook on high heat.  Scallops should be seared on each side, 2 minutes per side.  Shrimp are done when they are bring pink, 5-8 minutes.
