SUMMER SALAD

This is a great, healthy dinner that has so many possibilities.  To construct the perfect summer salad, choose at least one ingredient from each category.  Too tired to cook a dinner party but want to entertain?  Put out a salad bar.

Lettuce:

Mixed baby greens

Arugula

Spinach

Romaine

Iceburg

Kale

 

Proteins:

Ham

Turkey

Prosciutto

Chicken

Fish (shrimp, salmon, scallops)

Steak

Tempeh

Tofu

Beans (black, kidney, lentils, garbanzo)

 

Veggies:

Pick your favorites

Carrots

Broccoli

Cucumbers

Peppers (try sautéed or roasted)

Onion (sautée with peppers for great flavor)

Tomatoes

Celery

Beets

 

Cheese:

Goat

Cheddar

Brie

Mozzerella

Feta

Gorgonzola

Blue

Parmesan

 

Toppings (savory):

Avocado

Nuts (walnuts, hazelnuts, pecans, pine nuts)

Seeds

Wasabi peas

Roasted garbanzo beans

Bacon or Pancetta pieces

Spices (Truffle salt is a great addition)

 

Toppings (Sweet):

Any fresh fruit (apples, grapes, berries)

Any dried fruit (cherries, raisins, figs)

Candied nuts

 

Dressings (3 light and easy options):

Lemon:

2 tbs EVOO

1 tbs lemon juice

Salt and Pepper

 

Balsamic:

2 tbs EVOO

1 tbs Balsamic vinegar

Salt and Pepper

 

Apple Cider:

2 tbs EVOO

1 tbs Apple Cider vinegar

1 teaspoon of balsamic vinegar

Salt and Pepper

 

Ali's Favorite Combinations:

Arugula, Salmon, Beets, Goat cheese, Pine nuts with lemon Dressing

Spinach, Grilled Chicken, Walnuts, Blue Cheese, Dried Cherries with Balsamic dressing

Iceburg wedge, Bacon, Tomatoes, Blue Cheese with EVOO drizzle and Truffle Salt sprinkle

Mixed greens, Watermelon, Blueberries, Feta, Pumpkin Seeds with Lemon Dressing
