MINDFUL MACRO DINNER IDEAS

CHILI

1 lb of ground beef/chicken/turkey

1 pack of spicy taco seasoning or make your own (2 tbs cumin, 3 tbs chili powder, 1 tbs garlic powder, salt/pepper to taste)

1 bag of frozen peppers and onions

1 can of beans of choice

1 large jar of Raos marinara sauce

EVOO in pan (use your judgement)

add meat and brown, when mostly brown add seasoning

then add frozen peppers and onions right to meat and cook 

Add whole jar of marinara

Add drained cans of beans

Serve with sour cream, shredded cheddar, and/or avocado 

BAKED ZITI

 2 cups of stored ground beef

1 cup of Raos marinara

½ cup of mozzarella cheese

½ cup of ricotta

parmesan cheese

2 bags of drained miracle noodles or pasta zero; can use regular pasta

Heat first 4 ingredients stove top until melted.  Drain noodles in colander and rinse.  Press noodles with paper towels to remove excess moisture. Cook noodles in 1 tbs of EVOO in frying pan for 5 minutes to get rid of moisture.

 Serve ziti over noodles and sprinkle parm cheese

 Hack- can serve over veggies or even add veggies into the stove top mixture

Baked COD- omg.

 4 Cod fillets

olive oil

1 white onion

1 bunch of fresh parsley

1 jar of Rao’s marinara sauce

minced garlic

grated parmesan cheese

Place cod in baking dish and season with salt, pepper, and garlic. Top entire dish with fresh parsley and onion.  Pour Jar of sauce over top of dish. Top with more fresh parsley and drizzle top with oiive oil.  Bake in oven at 425 for 45 minutes.  Once removed from oven, flake apart fish into sauce….serve over cauliflower rice, zucchini noodles, or miracle noodles.  Top with parmesan cheese.

Rack of ribs

 2 racks of pork ribs

Spice rub (2 tbs cumin, 2 tbs chili powder, 1 tbs hot Mexican chili powder, 1 tbs paprika)

1 bottle of favorite bbQ sauce

1 can of dark beer

1 large disposable cooking tin

Place rack in one pan side by side.  Press spice rub into meat.  Pour beer in bottom of pan.  Cover with foil. Bake in over at 350 for 4 hours.  Take out of oven and lightly brush bbq sauce over meat.  Uncovered, place under broiler for 5 minutes

One pot Easy beef meatloaf

1 lb ground beef

1 egg

½ cup of oatmeal

½ cup of raos marinara sauce

½ cup of parm cheese

Garlic, Salt, and Pepper

You can use same recipe to make meatballs!!!!  Just form into balls.  You can freeze these.  Or you can air fry them at 400 20-30 minutes.

In a crockpot, add all ingredients and mix together with hands.  Form into a loaf.  Cover crockpot and cook on low for 6 hours.  Top with additional tomato sauce.  Tastes wonderful with sweet potatoes.

 

TURKEY MEATLOAF

1 pound of ground turkey

1 egg

½ cup of oatmeal

½ cup parmesan cheese

salt

pepper

garlic

2, 1/2 cup portions of Raos marinara sauce

In crockpot, hand mix all ingredients but only use ½ cup of marinara.  Form into a loaf.  Top loaf with ½ cup of marinara and sprinkle parm cheese.  Cook in crockpot on low for 6 hours.  Serve over sweet potato spirals or spaghetti squash.  If using Spaghetti squash, use additional marinara to make like pasta. 

Adaptation

Italian wedding soup- Use leftover meatloaf cut into cubes or leftover meatballs

12 cups of chicken broth 

left over meat any amount is fine, works best with at least 8-16 ounces

1 pound of escarole

1/2 cup of parm cheese

additional parm cheese for topping

1/2 tbs minced garlic

salt and pepper

2 eggs

 In a stock pot, bring broth to a slow boil.  Whisk eggs together.  Swirl fork in broth to move it in clockwise direction.  Whisk eggs.  While broth moving, slowly drizzle egg into broth so it is cooking as you drizzle.  Add meat, escarole, cheese, garlic.  Let simmer for 10 minutes.  Serve with additional parm cheese on top.

If you want to cook in crockpot on low, then just omit the eggs. 

 

Easy one pot stuffed peppers

 1 lb ground beef

1 egg

½ cup of oatmeal

½ cup of tomato sauce

Garlic, Salt, and Pepper

4 large bell peppers

Combine beef, egg, oats, sauce, spices.  Mix with hands.  Cut tops off of peppers and remove seeds.  Stuff meat mixture into peppers.  Cook in crockpot on low for 6 hours.

Tip: Make the stuffed peppers the same time as the meatloaf.  Then put in fridge and heat later in week

 

Mahi Mahi Eggplant tacos

3-4 Mahi Mahi fillets (can be frozen)

EVOO

White wine vinegar

Garlic powder

Salt

pepper

1 large eggplant

shredded cabbage

pico de gallo

line glass baking dish with parchment paper and brush with olive oil.  Place thawed fish fillets in dish and brush with EVOO and season with salt, pepper, and garlic powder.  Bake in 425 degree oven at for 25-30 minutes.

Slice eggplant into thin slices.  Spread on baking sheet and coat with EVOO.  Sprinkle salt, pepper, and garlic powder.  Cook in 425 degree oven until eggplant starts to crisp (20-25) minutes depending on how thick you cut eggplant.

 combine ¼ cup of EVOO and ½ cup of white wine vinegar, salt and pepper.  Toss bag of shredded cabbage in mixture.

 Now serve mini tacos by putting fish in eggplant taco shell and top with cabbage mixture and your favorite premade pico de gallo

 

 

SALMON AU GRATIN (serves 4)

4 Fillets with skin on

EVOO

Butter

Salt

Pepper

Garlic Powder

Grated Parmesan Cheese

 In frying pan, melt 1 tablespoon of butter then add one tablespoon of olive oil.  Put thawed salmon skin down in frying pan on medium.  Season with salt, pepper, and garlic powder.  Cook with skin down about 5 minutes.  Flip and cook flesh side down about 5 minutes.  Flip skin down and cook an additional minute.  Now top salmon with grated parmesan cheese and cook flesh down to crisp up the parmesan for 2 minutes.  Fish should flake. 

 Adaptation 1

Cook salmon as above but omit parmesan cheese.  Top salmon with premade pesto.

Adaptation 2

Marinate salmon in (2tbs sesame oil, 2 tbs coconut aminos, ginger, and garlic) marinate for atleast 20 minutes and cook with above technique.

SHRIMP FOR LIFE (serves 4)

 28 thawed jumbo SHRIMP

1 package of taco seasoning or seasonings of choice or use on everything spice rub

EVOO

Preheat airfryer to 400.  Coat shrimp with EVOO and then seasoning.  Air fry for 15 minutes (shake in between)

Serve with miracle noddles and personal alfredo recipe

 

Shrimp Alfredo (serves 1)

¼ cup of heavy cream

1 tbs of butter

2 tbs of grated parmesan cheese

Shrimp as above

2 cups of spinach

miracle noodles

In a saucepan on medium heat, combine butter, cheese, and heavy cream.  Heat until thickens up.  Add 14 shrimp.  Add 2 cups of raw spinach.  Add miracle noodles.  Coat all ingredients until spinach wilts and serve hot

 

SHRIMP AND FETA (serves 8)

1 bag of raw thawed shrimp

2 jars of Raos marinara sauce

1 container of feta cheese

EVOO

2 tbs minced garlic

Salt

Pepper

In slow cooker, add thawed shrimp, marinara, feta, minced garlic, salt and pepper to taste.  Cook on low for 6 hours.  Serve over miracle noodles, pasta, zucchini noddles, or cauliflower rice.

CROCK POT CHICKEN THIGHS- serves 8

Enough chicken thighs to coat bottom of crockpot (2 lbs)

Salt

Garlic

Pepper

¼ cup EVOO

Add any additional seasoning you like

Put thighs in crockpot, season with spices, coat heavily with EVOO.  Cook on low for 6 hours
